A white wine tomato sauce envelopes the hake in a beautifully and the addition of peas adds another texture element to this delicious sautée. Made easily in one pan for minimal clean up, this delicious entree is ready in just a little over a half an hour. Serve this Hake Medallions in Peas and Tomato Sauce with white rice for a complete meal in one pan.

  • hake (A pack of, medallions)
  • 1 can tomato
  • 300 grams peas
  • 1 pinch sugar
  • salt
  • pepper
  • 50 milliliters white wine
  • 1 onion
  • 2 cloves garlic
  • olive oil

    Directions

    1. Make a well seasoned sautée with onion and minced garlic.Add the smashed tomato as well as its juice and add a pinch of sugar to cut off the acidic flavour of the tomato.
    2. Cool then with the wine and when it all boils, add the peas and let them boil slightly.Season with salt and pepper and dip the medallions in sauce and let them simmer until it is to your liking and the peas are tender.
    3. Serve immediately, preferably with white rice.
