White Chocolate Raspberry 'Quest' bars

Adaptation of a white chocolate, raspberry protein cookie and quest bar recipe from bodyrock.tv. You can use regular white chocolate instead of making your own. Choose what ever sugar you prefer, use any nut butter and substitute any whole grain flour, almond meal or flax meal for the wholemeal spelt flour. Macros may be different than listed based on amount white chocolate used, protein powder and sugar. Depending on which calculator you use its about 200 to 250 calories per bar, 10g protein, 33g carbs and 10g fat.
Ingredients
- 2 oz. butter (Cacao)
- 1 Tbsp. coconut oil
- 1/3 cup sugar (: powdered sugar, stevia or coconut sugar)
- 1 tsp. vanilla extract
- 1 pinch salt
- 1 cup spelt flour (wholemeal)
- 4 scoops protein powder (I used Raw fermented paleo protein powder)
- 2 Tbsp. sugar (choice, I used stevia)
- 1/2 tsp. sea salt
- 1/2 cup nut butter (I used almond butter)
- 3/4 cup honey (or agave)
- 1/2 cup unsweetened almond milk
- 1/2 cup freeze-dried raspberries
- 1/2 cup white chocolate (pieces you made)
Directions
- Begin by making the white chocolate: melt the cacao butter in a double boiler.
- Once melted, stir in the 1 tbs coconut oil and mix until fully combined.
- Add in the 1/3 cup sugar and stir until dissolved, remove from heat.
