- 16 oz. raspberries (frozen thawed, or very ripe fresh raspberries)
- 2 1/2 Tbsp. cornstarch
- 2 1/2 Tbsp. lemon juice
- 2/3 cup granulated sugar
- 12 oz. baking chocolate (white, chopped small)
- 1/4 cup heavy cream
- 16 oz. cream cheese (16 ounces at room temperature ***)
- 1/2 cup unsalted butter (at room temperature ***)
- 1/4 tsp. salt (plus more to taste)
- 2 tsp. vanilla extract
- 7 cups powdered sugar (more or less as needed)
