- 2 sheets gelatin (if wanting it to stay in shape on defrosting)
- 60 grams caster sugar (golden vanilla)
- 1 Tbsp. raspberry liqueur (optional)
- 450 grams white chocolate (finely chopped)
- 6 sheets leaf gelatin
- 150 mL milk
- 4 1/2 tsp. glucose (liquid)
- 6 egg yolks
- 450 mL whipping cream
- 90 grams icing sugar
