- 4 oz. sweet potato (roasted, skin removed)
- 1/2 tsp. active dry yeast
- 2 oz. lukewarm water
- 4 oz. whole wheat flour
- 4.25 oz. unbleached all purpose flour
- 1/2 tsp. kosher salt
- 2 Tbsp. olive oil
- 1 lb. crust (Sweet Potato, see above, and as always my Pizza Primer is a handy guide)
- 1/3 cup herbed cream cheese (at room temp)
- 1/2 cup leeks (chopped, white and pale green parts, thawed is OK)
- 1 cup cooked chicken (shredded)
- 1 1/2 cups italian blend cheese (shredded)
- 1 pinch salt
