- 2 cans white beans (14.5-ounce, drained and rinsed)
- 2 lb. rotisserie chicken (organic, skin removed and meat shredded)
- 1 lime (Juice and zest of, + extra lime wedges for garnish)
- 1/2 cup full fat coconut milk
- 1/4 cup cilantro leaves (chopped, + extra for garnish)
- 1 avocado (ripe, pitted and cut into large chunks)
- 5 cloves garlic
- 1 lemon (Juice of)
- 2 tsp. apple cider vinegar (raw)
- 3/4 cup water
- 1 tsp. Dijon mustard
- 1/2 tsp. sea salt
- 2 Tbsp. nutritional yeast
- freshly ground black pepper
- 1 head kale (lacinato, dino, center rib removed and thinly sliced)
- 1 head romaine (large, chopped)
