This was delicious! Modified slightly - did the stove top version. Boiled three bone-in, skin-on chicken thighs while chopping the veggies. Then shredded the chicken while the onions, garlic and jalapeños cooked. Used half the water from boiling the chicken in place of stock and compensated with about 1 tbsp of salt. Simmered everything for 30m and then added the cheese and sour cream, simmered for 10m more. Would make again for sure!
