- 3 shallots (Large, chopped)
- 2 jalapenos (Fresh, Minced, seeded if you don't want too much heat)
- 3 cloves garlic (Minced)
- 1 Tbsp. cumin
- 2 tsp. ground coriander
- 2 tsp. chili powder
- 8 cups chicken broth
- 4 Tbsp. cornstarch (Mixed with 4 Tablespoons water)
- 1 chicken meat (Pre-cooked Rotisserie, removed and shredded)
- 45 oz. beans (Cannelloni)
- 8 oz. diced green chiles (can add more if desired)
- 2 ears corn kernels (Fresh, removed from cob, or use 2 cans)
- 1 tsp. salt (As desired for taste)
- 1/2 tsp. pepper
- 1/2 lime juice
- 1 cup heavy cream
- 1 bunch cilantro (Chopped for garnish, optional)
- 1 tomato (Chopped for garnish, optional)
- 1 jalapeno (Sliced, Garnish, optional)
- 1 cup sour cream (Garnish, optional)
- 1 cup Monterey Jack cheese (Shredded for Garnish, optional)
