- 1 lb. rotini (or other short cut pasta)
- 2 Tbsp. butter

- 2 cloves garlic (minced)
- 1 onion (small, finely diced)
- 1/4 cup dry white wine
- 1 Tbsp. Dijon mustard
- 8 oz. sharp white cheddar cheese (grated)
- 2 cups milk (I used skim milk but mixed in about 2 T heavy cream)
- 1 Tbsp. fresh thyme
- 1 Tbsp. fresh oregano
- crushed red pepper flakes (to taste)
- Parmesan cheese (to taste)
