Description
This simple veggie-packed salad is bursting with bright Mediterranean flavors. It’s one of those dishes that is refreshing and delicious right away, but even better a few hours later, once the flavors have developed. Serve it as a side salad, as suggested here, or spoon it over your favorite greens. You can also add canned tuna, grilled chicken or salmon, or cooked shrimp for a more robust meal. The recipe, which makes 8 cups, is a Yummly original created by Ashley Strickland Freeman.

- 1 English cucumber
- 1 shallot
- 1 pt. grape tomatoes
- 2 cans Great Northern beans (15.5-oz. each)
- 1/3 cup chopped fresh dill
- 1 Tbsp. lemon zest
- 3 Tbsp. lemon juice (plus 1 more Tbsp. if you like)
- 2 tsp. Dijon mustard
- 2 tsp. honey
- 1 tsp. kosher salt
- 1/2 tsp. black pepper (preferably freshly ground)
- 1/3 cup extra-virgin olive oil
- 3/4 cup crumbled feta cheese

Directions
- Quarter cucumber lengthwise, then slice crosswise into 1/2-inch pieces. Halve the shallot and thinly slice it crosswise. Cut tomatoes in half lengthwise. Rinse and drain beans. Chop dill if you haven’t already done that. Placed prepped ingredients in a serving bowl and combine.
- In a small bowl, whisk together lemon zest, 3 Tbsp. lemon juice, the mustard, honey, salt, and pepper. Slowly add olive oil in a steady stream and whisk until dressing is thoroughly blended.
- Pour dressing over bean mixture and sprinkle with feta. Toss gently to coat. Taste salad and add 1 more Tbsp. lemon juice if you like. Serve salad immediately, or cover and chill until you’re ready to serve (up to 4 hours).
