- 1 onion (large)
- 3 inches ginger (piece of, peeled and minced, a microplane makes quick work of this)
- 5 cloves garlic (peeled and minced)
- 2 sweet potatoes (large, scrubbed and diced, peeled if you like)
- 28 oz. tomatoes with juice (chopped, or can)
- 4 cups chicken stock
- 1 cup chunky peanut butter
- 1 Tbsp. ground coriander
- 1 tsp. cayenne
- 14 oz. coconut milk (I used full-fat)
- 2 lb. boneless, skinless chicken thighs (cut in half lengthwise)
- salt
- freshly ground black pepper
- 1 cup roasted peanuts (for garnish, optional)
- chopped cilantro (fresh, for garnish, optional)
