- 2 Tbsp. basil (finely chopped, or parsley for garnish, optional)
- 60 grams butter
- 60 grams flour
- 1 1/2 cups heavy cream (plus ¼ extra if the sauce becomes too thick)
- 50 grams gorgonzola (each of, Parmesan, Brie and Feta, 200g in total – see notes)
- 1 Tbsp. Dijon mustard
- 1/2 Tbsp. dried thyme
- 1 tsp. ground black pepper
- 1 pinch salt (– to taste)
- 1 brown onion (small, diced)
- 2 cloves garlic (crushed/ minced)
- 200 grams chorizo (diced)
- 1 yellow bell pepper (small, diced, around 90g)
- 2 spinach leaves (firmly packed cups of)
