- 2 lb. leg of lamb (boneless, trimmed and cut into 1-inch cubes)
- 8 small red potatoes (scrubbed and cut in half)
- 14 oz. diced tomatoes (canned)
- 1 cup chopped onion
- 3 carrots (peelt and cut into chunks)
- 2 parsnips (peeled and quartered lengthwise and cut into 1-inch slices)
- 1 turnip (small, peeled, halved and each half cut into 8 chunks)
- 1 bay leaf
- 1/2 tsp. salt (or to taste)
- 1/4 tsp. black pepper (or to taste)
- 3 Tbsp. all purpose flour
- 2 cups frozen peas
- 1/4 cup flat leaf parsley (chopped, optional)
