I made this with ground bison. My Wegmans didn't have any coleslaw mix, so I used shaved Brussels sprouts, grated carrots and chopped celery I would have had to throw away. The flavor was good, but I added some crushed red pepper to give it some kick.
The Brussels sprouts were a good rescue. I hope to make this again with the coleslaw mix to see if it makes a difference.

Super easy weeknight meal! Flavorful and the flavors only get better overnight! We add Gochujang to spice it up a bit as well!

The flavors are good but it was a bit too salty for my taste. I also added minced garlic and diced serrano pepper.

I liked it better than I thought I would. This will probably go into heavy rotation in my house. We splurged by adding a drizzle of sweet chili sauce, it doesn’t take much, and it’s not necessary if you are really trying to minimize points. I even considered doing a scramble with the leftovers...but there were no leftovers!

Oh this was fantastic. I’m on weight watchers. Hubby is not. We both loved it. So good, so super easy. Definitely making this next week
