- 1/2 tsp. xanthan gum (omit if your blend already contains it)
- 1/2 cup natural cocoa powder (unsweetened)
- 1/4 tsp. kosher salt
- 1/4 tsp. baking soda
- 6 Tbsp. light brown sugar (packed)
- 1/2 cup plain greek yogurt (fat-free, slightly warmed)
- 6 Tbsp. applesauce (unsweetened smooth, slightly warmed)
- 1 Tbsp. neutral oil (like grapeseed, sunflower, vegetable, canola)
- 2 eggs (100 g, weighed out of shell + 1 egg yolk, at room temperature, beaten)
- 1/2 tsp. pure vanilla extract
