- 2 cups beans (I used Orca beans but I can’t help but wonder if some of their brindled beauty was lost in the chili)
- 8 cups liquid (I like to use a combo of stock and beer, something light like a lager or a pilsner)
- 1 tsp. kosher salt (diamond)
- 1 white onion (or large yellow, chopped)
- 2 tsp. ground cumin
- 1 tsp. corriander (ground)
- 1 tsp. chili powder
- 1 tsp. fresh oregano (minced, or sub ½ tsp of dry)
- 1 lb. ground turkey
- 1/2 cup green chiles (chopped roasted)
- 3 cloves garlic (minced)
- 1/2 tsp. black pepper (or ground white)
- salt (a pinch more)
- fresh lime (optional)
- avocado (optional)
