Ingredients

  • 4 cups mixed salad greens
  • 1 cup watermelon (cubed)
  • 1/3 cup kalamata olives (cut in half)
  • 1/3 cup Greek feta cheese
  • 1 tablespoon parsley (chopped)
  • balsamic vinaigrette
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon italian seasoning
  • 1 pinch sea salt

    Directions

    1. Place greens in bowl and top with watermelon, Kalamata olives, Greek feta cheese and fresh parsley.
    2. Add the ingredients for the vinaigrette in a small jar. Place lid on jar and shake to mix. Adjust seasonings to personal taste.
    3. Pour Balsamic Vinaigrette over top of salad and mix.
    4. Serve immediately and enjoy.
    5. Recipe Notes Use as much or as little of the Balsamic Vinaigrette as you like. Any left over will keep for several days.
