- feta cheese crumbles (dairy free, I used Follow your heart vegan feta)
- extra-virgin olive oil
- red wine vinegar

- 1 English cucumber (sliced in half lengthwise, then sliced into 1/2” pieces)
- 1 small red onion (chopped)
- 1/4 cup mint leaves (roughly chopped)
- 1/4 cup basil leaves (roughly chopped)
- 1/2 cup feta cheese crumbles (dairy free, I used follow your heart brand*)
- 1/4 cup extra virgin olive oil
- 2 1/2 Tbsp. red wine vinegar (or balsamic)
- 1 tsp. pure maple syrup (optional)
- 1/4 tsp. fine sea salt
