- vinaigrette (Lemon)
- 3 Tbsp. olive oil
- 2 Tbsp. lemon juice
- 3 Tbsp. fresh chives (snipped)
- 1 Tbsp. parsley (McCormick Gourmet™, Flat Leaf)
- 2 tsp. sea salt (McCormick Gourmet™ Mediterranean Spiced)
- 1 1/2 tsp. thyme (McCormick Gourmet™)
- 1 tsp. minced garlic
- 1/2 tsp. black pepper (McCormick Gourmet™, Coarse Ground)
- 1/2 tsp. rosemary (McCormick Gourmet™, Crushed)
- 2 cans white beans (15 ounces each, drained and rinsed)
- 1 cup diced tomatoes
- 3 Tbsp. grated Parmesan cheese (divided)

Directions
- For the Lemon Vinaigrette, mix oil and lemon juice in small bowl with wire whisk until well blended. Add chives and seasonings; mix well. Set aside.
- Mix beans and tomatoes in large skillet. Cook on medium heat 5 minutes or until heated through, stirring occasionally. Remove from heat. Add Vinaigrette and 2 tablespoons of the Parmesan cheese; mix lightly.
- Sprinkle salad with remaining 1 tablespoon Parmesan cheese before serving.

I was intrigued and skeptical about this recipe at first, but after making it, this is a recipe that strangely works! The smoothness and creaminess of the beans, with the acid of the tomatoes, and the fresh herbed vinaigrette. Yes! Hearty and healthy! Would make again.
