  • vinaigrette (Lemon)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 tablespoons fresh chives (snipped)
  • 1 tablespoon parsley (McCormick Gourmet™, Flat Leaf)
  • 2 teaspoons sea salt (McCormick Gourmet™ Mediterranean Spiced)
  • 1 1/2 teaspoons thyme (McCormick Gourmet™)
  • 1 teaspoon minced garlic
  • 1/2 teaspoon black pepper (McCormick Gourmet™, Coarse Ground)
  • 1/2 teaspoon rosemary (McCormick Gourmet™, Crushed)
  • 2 cans white beans (15 ounces each, drained and rinsed)
  • 1 cup diced tomatoes
  • 3 tablespoons grated Parmesan cheese (divided)

    Directions

    1. For the Lemon Vinaigrette, mix oil and lemon juice in small bowl with wire whisk until well blended. Add chives and seasonings; mix well. Set aside.
    2. Mix beans and tomatoes in large skillet. Cook on medium heat 5 minutes or until heated through, stirring occasionally. Remove from heat. Add Vinaigrette and 2 tablespoons of the Parmesan cheese; mix lightly.
    3. Sprinkle salad with remaining 1 tablespoon Parmesan cheese before serving.

    I was intrigued and skeptical about this recipe at first, but after making it, this is a recipe that strangely works! The smoothness and creaminess of the beans, with the acid of the tomatoes, and the fresh herbed vinaigrette. Yes! Hearty and healthy! Would make again.
