  • 2 pounds stewing beef (well-trimmed, boneless, cut into 1-inch pieces)
  • 3 tablespoons vegetable oil
  • 2 onions (large, sliced)
  • 6 whole cloves (can use ground – about 1/2 tsp.)
  • 2 large garlic cloves (chopped)
  • 2 cinnamon sticks (or 1 tsp. ground cinnamon)
  • 1 bay leaf
  • 1/4 teaspoon crushed red pepper (dried)
  • 1 1/2 cups coconut milk (or whole milk)
  • 28 ounces tomatoes with juice (whole, peeled, or drained and use 1 cup-ish beef broth instead of the tomato juices)
  • 3 tablespoons chutney (Major Grey)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons peeled fresh ginger (minced, could use ground – about 1/4 tsp.)
  • 3 teaspoons mild curry powder (start with 2 and work your way up, if needed)
  • 1/2 teaspoon salt

    Fantastic mild tasty curry. Taste just like the curry from jape see restaurant and easy to make. I cooked beef the night before so spread the cooking time.
