  • 1 avocado (medium, peeled, pitted and sliced)
  • 1 lime peel (grated and lime juiced)
  • 1/4 honeydew melon (small, peeled and sliced)
  • 6 ounces arugula leaves
  • 3 tablespoons olive oil
  • 1 red chili pepper (small, seeded and sliced)
  • 1/2 lemongrass stalk (thinly sliced)
  • 12 ounces large shrimp (cooked peeled, thawed if frozen and drained)

    Directions

    1. Toss the avocado with 1 tbsp of the lime juice. Toss with melon slices and arugula and divide among 8 glasses or salad plates.
    2. Heat oil in a medium skillet on medium heat. Cook chili pepper and lemongrass for 1 min. Add shrimp and cook for 30 seconds. Add remaining lime juice and peel and toss to coat.
    3. Spoon shrimp over salad with pan juices. Garnish with a grinding of black pepper and serve immediately.
