- 8 yellow potatoes
- 25 small potatoes
- 1/2 cup Swiss chard (chopped, spinach is a good substitute)
- 1/2 cup asparagus (pieces, can use 1 cup, if you really like asparagus)
- 1/2 cup cooked bacon (chopped, from clean source of pork, I've also used fried deli meat, like turkey, which isn't quite as good but still works well if you don't have/like bacon)
- 1/4 cup green onions
- 3/4 cup mayonnaise
- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. balsamic vinegar
- sea salt
- Sea salt and fresh ground pepper to taste
