- 4 cups cauliflower florets (no bigger than 1 ½-inches long)
- 2 Tbsp. olive oil (plus more for drizzling)
- 1/2 tsp. kosher salt
- 4 oz. goat cheese (softened)
- 1/2 tsp. pink peppercorns (freshly crushed, divided)
- 1 Tbsp. chives (chopped)
- 1 bag Stacy's Multigrain Pita Chips

Directions
- Preheat oven to 450.
- Toss cauliflower in large bowl with 2 Tbsp. olive oil and salt.
- Arrange in a single layer on rimmed baking sheet; bake 10 minutes. Toss with a spatula, rotate baking sheet; bake 10 minutes more until deeply golden brown and tender.
