- 1 cup carrot (julienned)
- 1 cup cabbage (julienned)
- 1/2 cup bean threads (soak until softened, squeeze the water out, cut into portions about the length of julienned carrot or cabbage)
- 1/4 cup wood ear mushrooms (sliced, soak until softened, wash thoroughly, drain well)
- 1/2 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. sugar (vegan)
- 1 spring roll wrappers (stack of, the large kind, not the small kind for wonton; read ingredients carefully to make sure there are no eggs or dairy derivatives)
- 1 Tbsp. tapioca starch (mix with 3 tablespoons water and use it later to help seal the roll well)
- 3 Tbsp. water
- 1 Tbsp. agave nectar (or vegan sugar)
- 1 Tbsp. liquid aminos (or light soy sauce)
- 1 Tbsp. lime juice
- red chili pepper (optional)
