- 3 garlic cloves (very finely chopped)
- 2 red chillies (deseeded for less heat if preferred, very finely chopped)
- 2 sticks lemon grass (first two layers removed, the white bit finely chopped)
- 3 cms fresh ginger
- 3 Tbsp. soy sauce
- 10 black peppercorns
- 3 whole cloves
- 2 star anise
- 1 cinnamon stick (small)
- 300 grams rice noodles
- 400 grams king prawns (raw, peeled)
- 1 lime (small)
- 4 tsp. fish sauce (optional to serve Sriracha and/ or hoisin sauce)
- thai basil leaves (Small handful of fresh, optional)
