Description
Salty, sour, sweet, and tangy — that’s what you’re in for with these Vietnamese pork noodle bowls. This quick main dish is a “choose your own adventure” recipe. Everyone can pick the toppings they like, including fresh vegetables and herbs and tangy-sweet nuoc cham sauce, so the whole family is happy. If you’re out of noodles, it’s great over rice, too. The recipe is a Yummly original created by Ashley Strickland Freeman.

- 8 oz. vermicelli rice noodles (uncooked, or rice pad Thai noodles)
- 2 cloves garlic
- 2/3 cup water (divided)
- 1/3 cup firmly packed light brown sugar (for garlic sauce)
- 2 Tbsp. soy sauce
- 3 1/2 Tbsp. fish sauce (divided)
- 2 tsp. cornstarch
- 1 1/2 lb. pork tenderloin
- 1/4 cup fresh lime juice
- 1/4 cup firmly packed light brown sugar (for nuoc cham)
- 1/4 tsp. crushed red pepper flakes (or use 1/2 tsp. for more heat)
- 1/2 English cucumber
- 1 large lime
- 2 cups green leaf lettuce (shredded)
- 1/2 cup fresh mint leaves (from about 1/2 bunch)
- 1/2 cup fresh basil leaves (from about 1/2 bunch)
- 1 cup shredded carrots (pre-shredded, or shredded by hand)
- 2 Tbsp. vegetable oil (plus more if needed)

Directions
- Cook rice noodles according to package directions, then set aside.
- Meanwhile, mince garlic. In a small bowl, stir together garlic, 1/3 cup water, 1/3 cup brown sugar, the soy sauce, 1 Tbsp. fish sauce, and the cornstarch. Set garlic sauce aside. Cut pork tenderloin into 1/4-inch-thick slices and set aside.
- Make nuoc cham: In another small bowl, stir together lime juice, remaining 1/4 cup brown sugar and 2 1/2 Tbsp. fish sauce, the red pepper flakes, and remaining 1/3 cup water. Set aside.
