- 1 lb. skinless snapper fillets (boneless, 3/4 to 1-inch thick)
- 1/2 tsp. sea salt
- 1 Tbsp. grape seed oil
- 12 leaves romaine lettuce (or Boston)
- 4 small carrots (cut into matchsticks)
- 1 cup thai basil (each fresh, or regular basil, fresh cilantro and fresh mint)
- unsalted peanuts (toasted, chopped, optional)
- 3/4 cup white vinegar
- 3 Tbsp. evaporated cane juice (organic, aka organic sugar)
- 3 Tbsp. fresh lime juice
- 1 Tbsp. fish sauce
- 1/2 chile pepper (Thai, or serrano chile, thinly sliced, or to taste, NOTE: Remove the seeds for less heat.)
