- 3 Tbsp. garlic (not Russian peeled, and crushed)
- 5 stalks lemongrass (white part only, softened)
- 4 shallots (medium, peeled, roughly chopped)
- 8 spring onions (or Scallions, stalks removed)
- 2 bunches vietnamese mint (stalk removed, roughly chopped)
- 2 bunches coriander (roughly chopped, equivalent quantity to the Vietnamese Mint)
- 1/2 cup lime juice
- 2 tsp. citric acid
- 2 Tbsp. coconut oil (or other tolerated oil or more to bind)
