- 4 chicken legs (skin on)
- 4 inches ginger (piece of)
- 2 sticks lemongrass
- 2 garlic cloves
- 1 chicken stock cube
- 2 star anise
- 1 tsp. five spice
- 1 bunch mint (reserving the leaves for the accompaniments)
- 1 bunch coriander (reserving the leaves for the accompaniments)
- 300 grams rice noodles
- 3 spring onions
- 2 red chillies
- 1 lime
- mint leaves (from the bunch)
- coriander leaves (from the bunch)
- 200 grams stir fry vegetables (mixed, or beansprouts)
- 2 Tbsp. sesame oil (or chilli oil)
- 1 Tbsp. soy sauce

I used 6 chicken thighs, a combination of sesame + sunflower oil to fry the chicken in and beef stock cubes to add complexity to the broth.
