- 3 chicken breasts (large, about 500g)
- 450 grams rice noodles
- 4 spring onions (finely sliced on an angle)
- 1 carrot (shredded or peeled into ribbon with a vegetable peeler)
- 2 handfuls mung bean sprouts (large handfuls)
- bunches coriander (large bunch, chopped)
- bunches mint (small bunch, leaves chopped)
- 1 red chilli (thinly sliced, optional)
- 2 Tbsp. fried shallots (crispy, optional)
- 1 kaffir lime leaf (tough central stalk removed, very finely sliced,, optional)
