- 1.2 kilograms chuck steak (cut into roughly 4cm cubes)
- vegetable oil (for shallow frying)
- 5 shallots (small Asian, finely chopped)
- 3 garlic cloves (finely chopped)
- 3 Tbsp. tomato paste
- 3 slices fresh ginger
- 3 whole star anise
- 1 cinnamon stick
- 2 small carrots (cut into bite-sized chunks)
- 1 1/2 Tbsp. fish sauce (or to taste)
- coriander ((cilantro) leaves to serve)
- baguette (or steamed rice to serve)
- 1 lemongrass stalk (tender part bruised and finely sliced)
- 3 Tbsp. fish sauce
- 1 Tbsp. brown sugar
- 1 tsp. Chinese 5 spice (try my homemade version here)
