- 75 grams wholemeal flour (or plain)
- 250 grams cream cheese
- 150 grams golden caster sugar
- 1 egg
- 1 lemon
- 1/2 tsp. vanilla extract

Directions
- To make the base, mix the butter, 50 g caster sugar and flour into a dough, using a blender or food processor. Press into an 18cm (7in) round ovenproof dish.
- Bake in a preheated oven, 180*C (350*F) for 15-20 minutes, or until just golden.
- To make the topping,blend the ingredients together until smooth, using a blender or food processor. Spoon the filling over the cooked base and bake at 180*C (350*F) for 15-20 minutes, or until just set.
- Leave to cool then cut into 12 pieces.
