- boiling water
- 7 oz. bean sprouts
- 2 large carrots (peeled)
- 1 large cucumber
- 1 red chile (such as Thai)
- 1/2 bunch fresh cilantro (divided)
- 1/2 bunch fresh mint (divided)
- 4 Tbsp. onions (crispy, or 1 3/4 ounces, 50 g roasted, salted peanuts for topping)
