- 30 grams unsalted butter
- 300 grams red onions (finely sliced)
- 350 grams beetroot (peeled and coarsely grated)
- 1 clove garlic (crushed)
- 1/2 tsp. dried chillies (crushed)
- 100 grams dark muscovado sugar
- 100 mL malt vinegar
- 1 tsp. fresh thyme leaves (finely chopped)

- 2 cloves garlic (unpeeled)
- 1 Tbsp. olive oil
- 1 onion (large, finely diced)
- 1 carrot (grated)
- 1 stick celery (grated)
- 600 grams venison (minced)
- 200 grams minced pork (optional – use all minced venison if you prefer, but a bit of fat keeps the burgers moist, and venison is very lean and can dry out easily)
- 1 Tbsp. wholegrain mustard
- 1 Tbsp. fresh horseradish (grated, or substitute ready-grated horseradish from a jar or creamed horseradish, if you like)
- 1 egg
- 50 grams fresh breadcrumbs (preferably sourdough)
- 1 kg parsnips
- 2 Tbsp. olive oil
- 1 Tbsp. coriander seeds
- 1 Tbsp. sea salt
- 1 tsp. fresh thyme leaves (finely chopped)
- 2 Tbsp. clear honey
- lemon juice (a squeeze of, optional)
- 6 burger buns
- 1/2 sliced tomatoes
- onion rings (cooked hot battered, to garnish, optional)
