  • 1 cup sweet corn
  • 1 can sweet yellow corn
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons flour
  • 1/2 cup water
  • 1/2 cup milk
  • butter
  • cheddar cheese (or mozzarella cheese, sliced)

    Directions

    1. Blend corn, sugar, salt, flour, water, and milk in a blender except for the butter and cheese. Let stand approximately 3 minutes in the blender, and then blend again.
    2. Place a small amount of butter in a skillet on medium heat and pour the batter into the skillet to form pancakes. Each pancake will take 3 minutes to cook on each side until golden brown.
    3. Serve with cheese, folding each pancake in half and placing the cheese in the middle.

    i didn't like the consistency as i was flipping these so i added a lot more flour. bad idea! just play with the heat on the stove but don't add too much flour as it took away from the sweet corn flavor. next time i would like to try adding the cheese while it's cooking.
