Turned out delicious. Made way more than the four servings yummly lists. To simplify I used ground chicken breast and went with two pounds of it. Used the original Rotel variety as I find it more flavorful than the mild.

The picture looked really good. I made this recipe today, but I modified it by adding a mixture of peppers (green, yellow and orange) the yellow and orange has a sweet taste to it. I also added fresh garlic ( 2-cloves) or to your liking, mushrooms and sweet onions, sautéed with pepper and butter in saucepan. I wanted to cut down on preparations so I bought a rotisserie chicken and cut it up (pulled skin off). Mixed the velveeta cheese and rotel in sauce pan until creamy, combined all ingredients together, put in baking dish, sprinkled with parmesan cheese on top and baked. Oh yeah, I used thick spaghetti.
I must say, this is the best spaghetti recipe ever! Thanks a bunch!
