I’ve made this a couple times now and it’s very good. The only problem is I can never get it to fold because it breaks every single time. No biggie I just end up with a pancake rather than an omelette :)

This is one of my favorite breakfast dishes now. Had no broccoli for the stuffing, so I used cauliflower instead with some savoury Georgian plum sauce. Turned out awesome.
