- 3 lb. sweet potatoes (peeled and sliced into 3/4″ rounds, about 6 medium)
- 2 Tbsp. vegetable oil (I use avocado oil)
- 1 tsp. table salt
- pepper (to taste)
- 2 Tbsp. olive oil
- 1 small onion (diced, or use a shallot!)
- 1 bell pepper (diced)
- 8 oz. mushrooms (diced)
- 1 lb. ground beef
- 1 clove garlic (minced)
- 1 jalapeno (seeded and diced, optional)
- 2 tsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. salt
- pepper (to taste)
- 8 oz. tomato sauce (if you want the taco mixture to be saucier, you can use a 15-oz can)
- 4 handfuls baby spinach
