- 1 Tbsp. extra virgin olive oil
- 2 leeks (medium, washed and thinly sliced)
- 400 grams butter beans (drained and rinsed)
- 15 grams cherry tomatoes (about 10, halved)
- 50 grams spinach (2 large handfuls)
- 75 mL cream (I use Oatly cream, or you could use coconut or dairy)
- 50 mL white wine
- 1 lemon
- 1 bunch parsley (finely chopped)
- 35 grams feta cheese (crumbled)
- 60 grams breadcrumbs
- salt
- pepper
- lemon zest (on top to serve)
