  • 3 stalks lemon grass (the pale lower bulbs onlly chopped)
  • 2 inches ginger (piece)
  • 1 inch galangal (piece, or 1 'coin' of the dried version of it, crushed into small pieces)
  • 2 cloves garlic
  • 3 shallots (or 1 small red onion)
  • 3 green chilies (adjust as per taste)
  • 10 stalks cilantro stems (AND leaves)
  • 3 kaffir lime leaves (fresh, or the zest from one lime)
  • 1 lime (use the zested fruit)
  • 1/2 cup thai basil leaves
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 2 tablespoons soy sauce
  • 1/2 extra firm tofu (a pack of, cut into cubes)
  • 1 green bell pepper (cut into strips)
  • 1 bunch scallions (sliced lengthwise & cut into 2 inch pieces)
  • 5 long beans (Chinese green, cut into 2 inch pieces.)
  • 1 carrot (cut into julienned strips)
  • 1/2 can baby corn
  • 1 jigger straw mushrooms (small can)
  • 2 tablespoons sesame oil
  • 1 can coconut milk
  • 12 leaves thai basil (torn)
  • 3 stalks cilantro (torn into pieces, stalks et al!)
  • 2 green chiles (slit partially lengthwise)
  • soy sauce (as required)
