Can't get enough of these. Once you have done it a few times you can make sure you have the ratio of egg to flour right for your taste. I use a pealer to peal the carrot rather than grate it as i like the crunch. Always a winner in my house

Loved this! So tasty and very easy to make topped it with thinly sliced honey soy marinated chicken.

Yummy and hearty savory pancakes. I ended up chopping the (purple in my case) cabbage into smaller pieces than recommended in a food processor and added too much flour trying the mess with the quantity, but they still turned out well. Getting the egg to flour ratio right is always a little tricky with pancakes, and somewhat based on personal preference. Still, best to make this more "omelette" like. Less oily than the version you might find in a restaurant.

I never heard of okonmiyaka before tonight. I loved it, next time I'll put double the cabbage and 2/3 of the flour.
My batter was so thin I had added about 40g additional flour. I would love to bake it in muffin tins for a party tomorrow night and try to keep them warm or heat them up somehow. Fabulous with crème fraîche and sriracha. I love okonomiyaki. Consider me woke.
