- 10 oz. white mushrooms (stems trimmed and mushrooms halved)
- 2 garlic cloves (medium, minced)
- 1 tsp. fresh rosemary (minced)
- 1/2 tsp. dried thyme
- 1/2 cup white wine
- 1/2 cup vegetable stock
- 1/2 tsp. salt
- 1 cup diced tomatoes (canned)
- 1 bay leaf
- 4 carrots (large, about one pound, peeled, halved lengthwise, and cut into 1-inch pieces)
- 4 red potatoes (medium, about 1 and 1/2 pounds, peeled, quartered lengthwise, and cut crosswise into 1-inch pieces)
- 1 Tbsp. cornstarch
- 1 Tbsp. cold water
- 1 cup frozen peas (thawed)
- 1/4 cup fresh parsley leaves (minced)
- 1 Tbsp. balsamic vinegar

Used Worcestershire sauce instead of balsamic vinegar and it gave a really nice robust flavor

It was hearty and wholesome but took a good 2 hours to make. Felt like it needed a touch of sweetness like dried apricots or perhaps I should have used a sweet wine. I didn't have a red onion for the dish, maybe would have made a difference as well.

AMAZING!!! So good. I added lentils at the same time as carrots and potatoes for mor oomph.

Delicious! I added broccoli and cauliflower and sweet peppers. Next time I will also add jalapeños!

While I did not use mushrooms (not a fan) i used corn and lima beans (added with the peas), it turned out AMAZING! I'm not big on veggies and love meats, but i would recommend to anyone!
