- 1 can red kidney beans
- 1 can kidney beans (white)
- 1 can pinto beans
- 2 onions (medium, diced)
- 3 cloves garlic (chopped fine)
- 1 eggplant (small, diced)
- 2 zucchinis (medium, diced)
- 1 red bell pepper (large, cored/seeded and diced)
- 6 tomatoes (diced or 1 large can of diced tomatoes including juice)
- 1 Tbsp. ground cumin
- 2 tsp. chili powder
- 2 Tbsp. fresh oregano (chopped, dried is also fine)
- 3 Tbsp. fresh parsley (or cilantro, chopped)
- 2 Tbsp. lemon juice
- ground pepper
- sea salt
- olive oil (for cooking)
