- 2 Tbsp. coconut oil
- 8 oz. shiitake mushrooms (stems removed, sliced)
- 1 cup sweet potatoes (diced, peeled)
- 1 red bell pepper (small, sliced, or red chili pepper, if you want it spicy)
- 1 Tbsp. fresh ginger (minced)
- 1 clove garlic
- 1 Tbsp. red curry paste
- 1 tsp. pimenton (smoked paprika)
- 1/2 tsp. ground turmeric
- 3 cups vegetable stock
- 14 oz. coconut milk (well-shaken)
- 1 lime
- 2 Tbsp. soy sauce (or, if you're not a practicing vegetarian, fish sauce, for extra umami)
- 2 Tbsp. brown sugar
- 1 tsp. toasted sesame oil (optional)
- 1/3 cup creamy peanut butter
- 3 ramen noodles (packs, 3 ounces each, discard the flavor packets.)
- 2 green onions (thinly sliced)
- 2 Tbsp. chopped cilantro
- 1/2 cup chopped peanuts

Love, love, loved it! For vegetables I used white onion, zucchini, red & orange & purple peppers, and carrots because that's what I have growing in my garden currently. I did add a little bit more vegetable broth at the end to thin it out a little because the noodles soaked up alot of the initial liquid.

Awesome flavor! I used a bit more broth to make it more soupy than noodley. Probably could also use rice instead of ramen. Lots of ingredients but easy to make and I had at least half of the ingredients on hand anyway! You should make it!
