- 15 oz. enchilada sauce (Hatch green chile, mild)
- 1 cup cornmeal (self-rising fine-ground, recommended: Martha White’s)
- 1/2 cup spelt flour

- 1 cup buttermilk (or 1 cup unsweetened soy milk mixed with 1 tablespoon vinegar)
