Tried with couscous and chickpeas and was pretty nice. Be generous with the lime juice and cheese/feta as it lacks a bit of saltiness without it. Try to blister the bellpeppers first in the oven so they are nice and soft when filling up. Make filling more juice and smokey (like chili con carne).

Very yummy and easy to make, only 4 stars as needed salt and pepper into stuffing mixture for more oomph
