- 1 cup green lentils (cooked, 1/2 cup dried lentils)
- 2 cups cooked brown rice (3/4 cup dried rice)
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1/2 cup dried apricots (finely chopped)
- 1/2 tsp. dried thyme
- 1/2 tsp. dried oregano
- 1 tsp. paprika
- 1 Tbsp. soy sauce (low sodium)
- 2 Tbsp. tomato paste (Split between filling and tomato sauce)
- 15 oz. diced tomatoes (no salt added)
- crushed red pepper flakes (to taste)

Really, really excellent dish! The apricot gives it a nice balance, as do all the herbs. I doubled the amount of tomato sauce and put it in the oven at 400 for 15 min at the end. I also boiled the inner half of the cabbage a 2nd time when I’d peeled off the outermost half; the inside leaves weren’t quite ready to peel after just 7 min in the pot. I had some green onions on hand and those lent a nice color to the dish. I also had a bit of leftover couscous so subbed that for about 1/3 of the rice, which turned out fine. Since I made this entire dish myself, to save some time & effort I did “deconstructed” cabbage roll, where I did alternating layers of cabbage & filling (like layering lasagna) and then topped it all with the sauce. This would probably make a nice instapot dish as well. I will make this again when I have family over!
