- 1 avocado (chopped (or guacamole))
- 1/4 cup salsa (either homemade or store bought would work)
- sour cream (for serving)
- 2 clove (finely minced)
- 1 Tbsp. oil
- 1 onions (small, chopped)
- 2 cloves garlic (finely minced)
- 1 jalapeño (finely chopped)
- 1/2 cup spinach (frozen, or 2~3 cups chopped fresh Spinach)
- 1/2 cup corn kernels ((fresh or frozen))
- 1 cup rice (Long grain, rinsed and drained)
- salt (& Pepper, to taste)
- 1 tsp. oil
- 1 onion (small, chopped)
- 2 cloves garlic (finely minced)
- 1/2 jalapeño (small, finely chopped)
- 1/4 cup tomatoes (puree)
- 1/2 tsp. ground cumin
- 1/2 tsp. chili powder
- 1 cup pinto beans (cooked)
- salt (& Pepper, to taste)
- 1 Tbsp. butter
- 1 shallot (small, finely chopped)
- 1 garlic cloves (finely minced)
- 1/2 jalapeño (small, finely chopped)
- 2 tsp. cornstarch
- 3/4 cup milk
- 2 Tbsp. cream cheese
- 1/4 cup cheddar (or Monterey Jack Cheese, grated)
- salt (& Pepper, to taste)
