- 1 oz. dried mushrooms
- 8 cups vegetable stock
- 2 Tbsp. soy sauce (or tamari)
- 1 Tbsp. white miso
- 2 cups leafy greens (chopped, I used spinach)
- 8 oz. ramen noodles (dried, I like Simply Asia brand, cooked according to package directions)
- green onions (sliced, optional)
- micro greens (optional)
- sambal oelek (optional)
- black sesame seeds (optional)
