- 1 Tbsp. olive oil
- 1 onion (small, chopped)
- 3 cloves minced garlic
- 1 jalapeño peppers (diced)
- 1 large carrot (peeled and chopped)
- 2 celery stalks (chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 zucchini (medium, chopped)
- 30 oz. black beans (drained and rinsed)
- 15 oz. red kidney beans (drained and rinsed)
- 45 oz. diced tomatoes
- 15 oz. tomato sauce
- 3 Tbsp. chili powder (depending on your taste, we used 3)
- 1 Tbsp. ground cumin
- salt
- black pepper
- green onions (Optional toppings: avocado slices, cheese, sour cream, Greek yogurt, chips, crackers, etc.)

I make this about once a month for my wife and I have brought it to get togethers with friends and its always popular. Try adding ground Bison some time. It goes great with that lean meat. Also portion is big and freezes well.

Super yummy! Added some corn and only used2 cans of black beans. Good with sour cream & avo with cornbread as side

This recipe is delicious! I added 1/2 cup of lentils and cooked it with the quinoa. I love making traditional chili, and this recipe makes me think I can get away from meat and serve a healthier, yet very tasty dish. The textures of the vegetables and the quinoa and lentils make this yummy dish hearty as well.
